Key Lime Varieties

They're larger, more oval, and thicker-skinned than Key limes, usually with few or no seeds and a milder, less acidic flavor. Key limes are the opposite on nearly every count: smaller, rounder, seedier, and noticeably more aromatic, with the tart intensity that makes an actual Key lime pie taste different from one made with bottled juice. Persian limes also tolerate cold better, which is part of why they replaced Key lime as the commercial standard. Planting a Key Lime Tree
Where and how you plant a Key lime tree matters more than with a lot of other fruit trees, since the roots need room to establish quickly in a spot that stays warm and well-drained. The tree adapts to a range of soils, as long as water doesn't sit around the roots. Full sun is non-negotiable, at least six hours a day, and a location sheltered from cold winter winds makes a real difference in the tree's first few years.
In the Ground
Dig the hole three to four times as wide as the container the tree came in and roughly three times as deep. Backfill so the tree ends up sitting at the same depth it was growing at in the container. This loosens the surrounding soil enough for young roots to spread quickly.
Space the tree 12 to 20 feet or more from buildings, other trees, and power lines, since crowding limits both growth and fruiting. If the site tends to hold water after summer rains, planting on a raised mound of soil helps keep the root zone from staying saturated.
In a Container
A pot roughly 15 inches wide and deep is a good starting size for a young Key lime tree. Drainage holes are non-negotiable regardless of what material you choose. Pests and Diseases to Watch For
Key lime isn't the toughest citrus when it comes to pests and disease, and a couple of issues are worth keeping an eye on. The Asian citrus psyllid is the most serious, since it spreads citrus greening, a bacterial disease with no cure once a tree is infected.
Key lime is also highly susceptible to citrus canker, which causes raised, discolored spots on leaves and fruit, and to Key lime anthracnose, a fungal disease that can kill young shoots and cause fruit to drop early.
Avoiding overhead watering that wets the foliage, especially during bloom, goes a long way toward keeping anthracnose in check. Scale insects and a handful of mite species round out the more common problems, though most are manageable with routine monitoring rather than heavy spraying.
Harvesting and Storing Key Limes
A Key lime is ready to pick once its peel turns from green to yellow, which signals full maturity rather than just ripeness. Because fruit on the same tree matures at different rates, expect to harvest in rounds rather than all at once. Once picked, Key limes keep in the refrigerator for several days to about a week when stored in a sealed bag, which is plenty of time to work through a batch before it declines.
